My Favourites in the Kitchen

 I don't know about you but there are items in my kitchen that I just cannot function without. They aren't necessarily expensive items, some are, but as the chief chef in our home, I find I NEED them. I entertain a ton, and usually for no less than 8-10 on a regular immediate family dinner. That means, I'm cooking in larger quantities most times and I want to make my life as easy as possible. 

I'm listing some of these must haves here with links to some of my Mama C recipes to go along with them. I just passed along my famous Amma's Pancake recipe again just recently and told my bestie the only way to make them is with a griddle. I actually don't know how anyone makes pancakes without one. I prefer this way of cooking them because I can make large batches at once, and trust me, these pancakes go quickly. She did go out to buy one, and I guarantee, she will be thanking me later. (her hubby and four kids definitely will be when they are all chowing down TOGETHER on these morsels of heaven. For my pancake recipe check this out: Viking Pancakes post
I set my griddle to 325 degrees so that the pancakes cook evenly and a little slower to make sure the insides are properly cooked. I also use this for any of my grilled sandwiches such as grilled cheese and reubens. It makes 8-10 medium size pancakes at a time, three rounds of my regular recipe. 
This is the new one I would like to try as my family pancake brunches have increased in size recently, three more of my "kids" my niece, her boyfriend and nephew along with my grand babies. I might actually get to sit down and eat with everyone if I had this one. ( now up to 12 for brekkie, considering at least 3 pancakes each)
This is definitely the most expensive item in my kitchen and I don't know how I lived without it for so long. I would definitely recommend the Artisan for its size as the Pro was just too big to move around and it didn't fit under my kitchen cabinets. I have several of the add ons that actually came included with mine at the time. Occasionally Kitchen Aid bundles the mixer and accessories. 
This mixer changed the quality of my baking especially from okay to amazing. I can't even explain why really, but seemingly its the consistency. This mixer blends and whips so thoroughly that all of my recipes improved. My whipped shortbread is probably my favourite and a family tradition at Christmas so I will be making some of those right shortly. You can find the recipe for my Whipped Shortbread here.

My Favourite Cookbooks

Sharing the things that make my life easier are what I love to do. Finding favourite items that I get rave reviews on myself is what makes these recommendations authentic and heartfelt. Anyone that knows me, knows that I love to entertain and cooking for friends and family. These are my favourite cookbooks that I use constantly and that I love to give as gifts. Surprise the cooks in your family with these tried and true cookbooks I own and love.

My son gave me both Chrissy Teigen cookbooks at my request last year for Christmas on my request. Both my daughter and daughter in law had them and raved about the recipes. They were delicious to boot. We make many of these recipes weekly because of the robust flavours and general comfort food feel of Chrissy's cooking.

I received this cookbook as a shower gift in 1987, it's still a fave, the best recipe pages are spattered and worn but hold many great food memories. 
Favourite Recipes: 
Ceasar Salad Dressing: Add 1 tbsp Sald dressing, no anchovy
Wifesaver: I add pesto and cherry tomatoes


This book I received as a gift from my mother in law Helen in 1987, just after I first was married. It became one of my staple cookbooks that I have given copies to my own kids because they hold some of our family tradition recipes. Everything in here is excellent. The one thing about the Canadian Living cookbooks in general is that they ALL taste amazing and they never fail. They really are tried and true recipes.
