Hi there! I’m Courtney Schwegel, Personal Chef, Holistic Nutritionist and food enthusiast. To me, food is about love. It’s about sharing, and it’s about nurturing. When I embarked on my path in the culinary arts, I had no idea where I would end up. What I did know from the beginning was that whatever I did, loving, sharing and nurturing would always be the driving force behind my cooking. I consider myself a chef first, and a holistic nutritionist second. This is very important in my approach to nutritional consultation, because I believe that all food should taste good. It shouldn’t be a fat-free, flavourless, low-calorie, lump on a plate. And it shouldn’t be a miracle meal-replacement shake with more ingredients in it than one can bear to read. Food should be tantalising and tasty. And I am here to show you that healthy food can be just that. For many years I’ve been learning how to make nutritious food taste, well, delicious. And this is something I can teach you. Whether it’s learning to make a decadent cheesecake out of cashews instead of cream cheese, or super-food smoothies that taste like milkshakes, I’ve got you covered. Initial Consultation – 1 hour
The initial consultation will give me a chance to get to know you. Your health goals, activity levels, lifestyle, current health concerns, eating habits, food likes/dislikes, cooking skills, and allergies/intolerances will be discussed at length. We will also work together to set wellness goals, which we will work towards in following sessions. This session provides me with a solid foundation upon which I can make some preliminary recommendations for you regarding your diet and your overall health. These recommendations, which will be sent to you within 24 hours of our appointment, may include delicious recipes for you to try, tasty and healthy meal ideas, supplement suggestions and practical strategies to get you closer to your wellness goals. The session will also serve as a starting point for future consultations and/or meal plans.
Follow-up Consultation – 1 hour
This session will take place about 3 weeks after our initial consultation and will give us the chance to check in you’ve had a chance to implement the recommendations from our first session. We will discuss what changes you’ve experienced, what worked for you and what didn’t, and how to move forward. Further recommendations will be made, getting you even closer to reaching the wellness goals you have set.
Additional Follow-ups – 30 minutes
These sessions can be scheduled as frequently as you like and will essentially follow the same structure as the Initial Follow-up Consultation.
Meal Plans
The advantages of meal plans are threefold. Firstly, they can make your life so much easier. Forget spending hours searching for recipes and planning your week of meals – I will do that for you! The recipes I provide will be selected and tweaked for you based on your culinary skills, time constraints and dietary preferences.
Secondly, they can make your life so much tastier. I love delicious food and can therefore promise you that healthy eating can be incredibly satisfying. I will share with you recipes from my collection of tried and tested favourites. No, they’re not boring, bland or fat-free. They are incredible recipes that use real food. Food that will simultaneously satisfy and nourish.
Finally, a meal plan will help you stay on track so that you can reach your wellness goals sooner. While I don’t believe there is a fast track to health and well-being, I do believe that certain tools increase our chance of success. Having a regime to follow takes the guesswork out of healthy eating and minimizes your chances of making poor food decisions.

The 1 week Meal Plan is for those who are looking for a little more structure in reaching their wellness goals. Recipes for breakfasts, lunches, dinners and snacks will be provided for a seven day period.
Meal Plan – 2 weeks
The 2 week Meal Plan is for those who are even more serious about completely revamping their eating habits and reaching their wellness goals. This includes a 2 week plan for breakfasts, lunches, dinners and snacks, with even more delicious recipes!
